Fat is a natural flavor enhancer. And the list of home-style dishes prepared with butter, lard and cream is long. No wonder, because these ingredients make roulades and the like taste even more intense. However, with a little creativity, we can conjure up dishes that are hearty but still low in calories. A different take on cabbage roulade and goulash
It is traditionally drunk during fasting: broth. It is such a popular diet soup because it has a lot of flavor but hardly any calories. If we pour a little broth over our cabbage rolls before braising them in the pan or oven, we don't have to add cream later. Turkey meat is a lean alternative to mince. Savoy cabbage instead of white cabbage adds a slightly more tangy flavor. Incidentally, a low-calorie version of goulash can also be made with turkey.
Delicious soups made from vegetables
The classic potato soup can also be made without a lot of fat. Although fat and cream are traditionally added, they don't have to be! Soup vegetables, bay leaf and stock give the dish enough flavor. Poultry sausages taste wonderful in this traditional dish - and have fewer calories than bacon. The lentil stew can also be made with lean meat and is not only wonderfully reminiscent of grandma's cooking, but is also healthy and rich in protein, iron and fiber.
Oven instead of pan, zucchini instead of pasta
If we bake our breaded schnitzel or fried fish in the oven without fat, we save a few calories. Potato salad is perfect as a side dish - prepared without mayonnaise, but with yogurt or vinegar and oil. With pasta, we can save a lot of calories by halving the portion and extending it with salad. Rocket salad, for example, goes perfectly with spaghetti bolognese. And if you want to skip the carbohydrates altogether, prepare your pasta entirely from vegetables such as zucchinis.
