Couscous and vegetable salad with cucumber, tomatoes and mint

Couscous is ideal for a low-fat and high-fiber diet. The grains from North Africa are quick to prepare because they only need to swell. This couscous and vegetable salad is very easy to prepare.

Couscous vegetable salad with cucumber, tomatoes and mint is a great diet companion

What I need for 4 portions:

- 200 g couscous
- 250 ml organic spelt drink (e.g. Provamel)
- 10 g Himalayan salt
- paprika spice powder, sweet
- 1 red bell pepper
- 1/4 cucumber
- 8 cherry tomatoes
- 1-2 tbsp each chives and fennel greens
- 4 tbsp olive oil
- 10 tbsp lemon juice (bottle)
- some fresh mint (to garnish)

How to make it:

1. mix the couscous with the spelt drink, salt and paprika powder in a bowl and leave to soak for 20 - 30 minutes, stirring occasionally.
2. wash, deseed and dice the bell pepper and cucumber. Halve the tomatoes. Finely chop the chives and fennel greens (use the remaining fennel bulb elsewhere).
3. mix the couscous with the oil and lemon juice, mix in the vegetables. Serve garnished with mint.
