Food such as leftovers is best stored in the fridge. This is because bacteria can multiply well if it is stored at more than 10 degrees. But: let it cool down properly first.
Preserving food by vacuum packing
There are now vacuum sealers for home use (from around 50 euros, e.g. on Amazon). The food is filled into the film bags provided - the machine then removes air and the bag opening is sealed. Cooked food usually keeps for approx. 2 to 3 days in the fridge. Vacuum-sealed food will keep for approx. 8 to 10 days. Tip: Many butchers offer to vacuum seal fresh meat. This is practical if you have difficulty estimating how much meat you need for a dish
Cling film or aluminum foil?
From an ecological point of view, cling film is superior to the aluminum version. Nevertheless, both are practical kitchen helpers for food storage.
Temperature: Aluminum foil is better for keeping things warm - such as a pot of soup during transport. Another advantage is that the packaging is light-proof and almost airtight. Food does not dry out so easily.
Acidic foods: Aluminum foil reacts with acid - tiny holes are created and the food is no longer protected. Therefore: Always cover citrus fruits or salads with cling film. It adheres well to cut surfaces, such as cucumbers.
Odors: Aluminum foil keeps the smell of strong-smelling foods such as onions or cheese at bay better than the thinner cling film.
Glass or plastic?
We all have a few food storage boxes in the cupboard. But be careful when choosing the material. Because both options have their advantages and disadvantages when it comes to preserving food.
The environmental factor: Although glass jars are heavier, they are definitely more environmentally friendly than plastic. Problem: They don't seal as well. A good compromise is a glass jar with an airtight plastic lid.
Heat resistance: If glass or ceramic bowls are placed in the microwave, they can crack. Better for storing food properly: microwave dishes made of heat-resistant plastic. This can often withstand temperatures of up to 200 degrees and has no effect on the taste of the food.
Clips instead of tins: cut cucumbers or lemons dry out quickly. Practical: plastic protective caps.
By the way: To preserve food for a long time, as little air as possible should collect in the container. This means: always fill to the brim.
