Vegetarian grilled food doesn't just taste good to veggies!

Use seasonal vegetables

Corn on the cob, mushrooms, zucchinis: there are plenty of fresh and tasty barbecue vegetables to buy at the market. If possible, use local vegetables that are in season - they simply taste best and seasonal consumption is also the most sustainable. Hard vegetables such as carrots, potatoes or corn should be pre-cooked on the stove to reduce the grilling time later. Please note that vegetables with long cooking times should always go on the grill first. Soft vegetables such as zucchinis, mushrooms or eggplants do not take as long and are therefore placed on the grill later. For purely vegetarian skewers, you should therefore use vegetables that have a similar grilling time. The cooking times cannot be determined exactly, as the type of grill also plays a role (direct or indirect grilling, type of grill). It is therefore easier to grill by vegetable type, as recommended above. A vegetable skewer can be ready in around 10 minutes, pre-cooked potatoes in around 20 minutes. Tip: Use metal barbecue skewers or watered wooden skewers - this is important to prevent the wood from burning during grilling.

Grilling vegetarian food: What goes with it?

In addition to vegetables, you can offer seitan, tofu and cheese - halloumi is a special grilled cheese that you can buy in the supermarket. Also offer vegetarian dips such as herb quark or hummus. Vegetarian barbecue sauces such as homemade ketchup always go down well. Salads are also part of the barbecue - whether green salad, potato and pasta salad (meat-free varieties) or delicious variations with couscous. Grilled potatoes are also a must. Prepare mixed grilled vegetables as vegetable packets, for example - this looks nice and you can portion the vegetables straight away. the variety is huge.

Vegetarian burgers are also popular - instead of meat patties, veggie patties are placed between the buns. This gives you more variety.

Veggie patty recipe for 4 people:

  • 400 g kidney beans (tin)
  • 1 small onion
  • 100 g grated cheese (e.g. cheddar or Emmental)
  • 100 g breadcrumbs (or a little low-fat quark)
  • 1 egg
  • flour for dusting
  • salt and pepper
  • a little vegetable oil

Preparation of veggie patties

  1. Drain the beans in a sieve and rinse. Place in a bowl and mash or puree. Peel and finely chop the onion and add to the mixture together with the cheese, breadcrumbs and egg. Season the bean mixture with salt and pepper to taste.
  2. Heat the vegetable oil in a frying pan. Dust your hands with flour and form 8 small or 4 large burger patties from the bean mixture. Fry in the hot pan or on the grill for 8 to 10 minutes on both sides until dark brown.
  3. Top the burger with vegetables and sauces as desired and serve warm.

How about a delicious herb mar inade for grilled vegetables? You will need:

  • 1 bunch of basil
  • 2 sprigs of rosemary
  • 2 cloves of garlic
  • 5 tbsp olive oil
  • 2 tsp honey
  • salt
  • pepper

Wash and chop the herbs and place in a cup with the olive oil and honey. Now peel the garlic cloves and squeeze them in. Add a little salt and pepper and the herb marinade is ready. If you like garlic, then this marinade is perfect for you:

Ingredients

  • 2 tbsp olive oil
  • 1 clove of garlic
  • a little salt
  • 1 sprig of rosemary
  • 2 tsp lemon juice

Mix olive oil with lemon juice, salt, rosemary and finely chopped garlic and you have a delicious marinade!

Delicious barbecue ideas for dessert

How about some sweet treats for dessert? Fruit, for example, is perfect for grilling. Cut the fruit into small pieces, drizzle with a little lemon or lime juice and then place in a grill basket. You can buy a well-rated model here. Pineapple, strawberries or bananas are suitable for grilling. Serving the grilled fruit with cream or chocolate sauce is particularly tasty. Grilled apricots and marshmallows also taste great together. Simply put them on a skewer and place them on the grill.

This is important when grilling fruit:
- If the bananas are already bursting open, it's the perfect time to take them off the grill.
- Strawberries are very delicate fruit and should therefore not be exposed to too much heat.
