Cakes without baking
No-bake cake recipes, also known as 'fridge cakes', are particularly popular in summer. They are usually lighter than heavy cream cakes and are therefore a delicious alternative, such as our coconut blueberry cake from the fridge. The pastry consists of cookie crumbs that are roughly chopped (ladyfingers, amarettini, rusks with chocolate, etc.). The crumbs are mixed with melted butter and pressed firmly into the base of the springform pan. The tin is then placed in the fridge so that the base hardens. While the base is cooling, prepare the filling using quark or yogurt and a little whipped cream, sugar and lemon zest. Gelatine or an alternative is always stirred in to make the filling firm to cut. Fresh fruit, pureed and added to the filling and/or placed on top as a topping, goes well with this. A sauce made from fresh fruit also tastes great with a fridge tart - this is poured on top or served after the tart has set.
