Simply pour hot vegetable stock into a thermos flask and you'll always have a portion with you. For the broth, you can skim off the liquid from a cabbage soup or simply boil the vegetable scraps (peel and stalks), e.g. from carrots, celery, peppers, onions, white cabbage and sugar snap peas, in water or instant broth and season with salt, chili, herbs and ginger.
