Grilling fish: Tips, tricks & recipes

Fish still tastes best fresh from the grill. Although salmon & co. are considered sensitive when it comes to preparation on an open fire, with a little know-how, grilling fish is just as successful as steak and sausages. We have also put together a few delicious barbecue recipes - not just for fish fans.

Score the fish before grilling

Not only stuff whole fish before cooking, but also score the skin several times. This allows spices to penetrate better.

Do not place fish directly on the grill

Wrap tender fillets with spices, herbs, oil and wine, e.g. in aluminum foil, banana or corn leaves. This will keep them juicy. Or place on a wooden plank.

Do not grill in direct heat

Grill fish gently, e.g. on the edge of the grill where it is a little cooler. Or simply hang the grill higher up. Too much heat will dry out the tender fish meat. If it is firm in the middle and no longer glassy, it is perfectly cooked.
