
Indirect grilling - this is how it works with your barbecue food!
Germans love barbecuing - no wonder, because a juicy piece of meat or fish or a spicy sausage is also something delicious. But vegetarian options are also popular, so it doesn't always have to be meat. However, some grilled food is sensitive or doesn't need the full heat. Indirect grilling is therefore the magic word for a gentler method that promises lots of flavor and is a little more vitamin-friendly. We show what perfect grilling looks like for professionals:
The charcoal ring
The charcoal surrounds the food in a ring. This method is particularly suitable for cooking a few large pieces of meat in the middle of the grill over a longer period of time, for example thick burger patties or steaks.
The ember eye
Ideal when many smaller pieces of food need to be cooked gently on the grill at the same time, for example fillet pieces, stuffed mushrooms or potatoes. The charcoal is used to create a glowing center in the middle and the food is placed around it.
Side cooking
Do you have sausages, skewers or perhaps a whole fish on the go? Then side cooking is the first choice: the entire embers are placed on one side of the grill so that there is enough space on the other side for long pieces of food.
Which meat needs to cook for how long?
- Spareribs approx. 90 minutes at 76 to 80 degrees
- Whole chicken approx. 60 to 90 minutes at 80 to 84 degrees
- Roast beef approx. 60 to 90 minutes at 80 to 84 degrees at 55 to 57 degrees (medium)
- Crusty roast (ham or shoulder) approx. 120 to 180 minutes at 72 to 76 degrees
